Ingredients
1 russet potato, sliced ⅓ cup turkey breakfast sausage 1 bell pepper, diced 1 tomato, diced 8 large eggs ¼ cup unsweetened milk ½ cup sharp cheddar, shredded ½ tsp salt ¼ tsp black pepper
Notes
Great for meal prep! Slicing the potatoes thinly ensures they cook through during the skillet stage.
Directions
Preheat oven to 375°F. Spray a 9×13 dish with oil. In a large skillet, cook potatoes and sausage (covered) over medium heat for 10 minutes. Add peppers and sauté 5–6 minutes; add tomatoes for 2–3 minutes. Transfer sausage and veggies to the baking dish. Whisk eggs, milk, salt, and pepper; pour over the mixture and top with cheese. Bake 32–35 minutes until a knife comes out clean. Let stand 10 minutes.
